Double Chocolate Hazelnut Cookies (of your actual dreams)

So my sister is recently vegan and since she's a million times better at baking than I'll ever be this is great news for my snacking because she has been baking vegan cookies like there's no tomorrow and she has honestly perfected this recipe. These are by far the best cookies I have ever eaten, vegan or otherwise, and I'm not going to lie these only came out of the oven a couple of hours ago and I'm pretty sure I've eaten 6 already...




Ingredients:
75g margarine
20g cocoa
80g plain flour
100g bar of dark chocolate, chopped - this allows for nibbling while baking, tbh more like 75g actually go into the cookies
100g of sugar - 20 brown, 80 white
handful chopped hazelnuts
1/2 tsp baking powder

Preheat oven to 170 degrees C.
First melt the margarine in the microwave at 30 second intervals until liquid.
Mix in both sugars.
Mix in chopped chocolate and hazelnuts.
Add flour, cocoa and baking powder, mix until well combined into a dough.
Line a baking tray with parchment paper and split dough into 15 equal sized balls and place evenly on baking tray.
Bake for 12-15 minutes then leave to cool completely before eating - because they will just fall apart if you don't wait, though I'm skeptical of this..
