Vegan What I Ate Today | 1

11am Breakfast

I woke up late once again this morning. Despite my best efforts to set alarms and be woken up by them I just can't seem to get up which is incredibly unlike me and I think can only be blamed on illness. I arose from the depths of my drowsiness at 10am and got ready for the day, I got dressed and put make up on and even curled my hair and then had a rather rubbishy breakfast if I must admit. I had a New York Blueberry Bagel with Pure Sunflower Margerine and Vegemite which I can't say was my best decision but it was ok... I also had a Doughnut Peach which are one of my absolute favourite fruits but far too small and in my house apparently get eaten way too fast! And just a glass of water. (Manchester water is sooooo much better than Nottingham's!)

2.30pm Lunch

For a late lunch I made me and my Mum some rice noodles, wok fried greens and mushrooms and grated carrot in a satay sauce which was soooooooooo nice. I had never had satay sauce before so I wasn't sure how good I'd be at making it but I can honestly say I did myself proud. I mixed a tablespoon each of peanut butter (with sunflower seeds), soy sauce and peanut oil, the juice from half a lemon and 2 tablespoons of water, I did add one chopped clove of garlic but I think I'm either going to disclude this completely next time or crush it so it combines with the sauce. I added a bit of sriracha to mine and it was great although as my mum pointed out would have been nicer hot as we ate it cold.
Alongside my lunch I had the cup of tea pictured above but had to get a new cup in a much bigger mug, pictured below (left) , as it went cold and just didn't taste like tea.


7.39pm Snack

During an early evening trip to Sainsbury's and after a long afternoon of painting the front of the house in ridiculous heat for a British Summer I came across these Lazy Day Foods Millionaires Crispy Squares which I thought would be nice and they were, not particularly impressive but pleasant and vegan and free from lot's of naughties so I was happy and had 2 before dinner.

8.30pm Dinner


Dinner was one of my favourites tonight, Me and my Mum both had Gnocchi with Vegan Pesto, Rocket, Cucumber, Sun Blushed Tomatoes and Green Olives and it was delicious! I very almost didn't finish this mahoosive plate full but I did share with my brother and it was great, I was completely full afterwards and missed out on Ice Cream Wednesday (tradition in my house since Wednesday's were boring) which I think I'll make up for with a smoothie bowl for tomorrows breakfast!

I think I'd like to do more posts like this, I know this is in the most part a fashion blog but veganism, and therefore what I eat, is a very big part of my life and I think worth sharing. Let me know if you'd like to see more posts like this!
